Ingredients:
2 cups pumpkin puree (not pumpkin pie filling)
2 eggs
3 tablespoons natural peanut butter (unsalted, xylitol-free)
½ cup rolled oats
3 cups whole wheat flour
Instructions:
Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
Whisk together pumpkin puree, eggs, and peanut butter until well combined.
Add oats and flour, mixing until a dough forms.
If dough is sticky, dust your hands and rolling pin with flour. Roll dough on floured surface to ½ inch thickness.
Cut into desired shapes using cookie cutters or knife.
Bake for 25-30 minutes until golden brown.
Cool completely on wire racks. They will harden as they cool.

Room temperature in airtight container: 6 weeks
Frozen: up to 3 months
Ingredient Substitutions:
Sweet potato puree for pumpkin
Brown rice flour or oat flour for wheat flour (better for sensitive stomachs)
